Bresaola is air-dried, salted beef that has been aged a few months until it becomes semi-hard and turns into a dark red, almost purple color.
A strict trimming process is essential to give the unique flavour. The meat loses up to 40% of its original weight during aging.
Bresaola is very lean and tender, with a sweet, musty smell.
It originated in Valtellina, a valley in the Alps of northern Italy’s Lombardy region.
As an appetizer, Bresaola is usually sliced thin and served on cold cut platters, garnished with olives, capers, cheese – it also can be used in delicious sandwiches.
