The most beautiful pine trees grow in the mountains of Switzerland, above 2000 m altitude. And where there are pine trees, there are of course pine cones. We used these to heat the house during the winter.
An even better use for pine cones was to smoke our meat. And that’s exactly what we do here in the Alphütte! First we collect the pine cones in the mountains of Taiwan. During the fairly long time it takes for the ham to dry, we occasionally hang it in the pinecone smoke for a few hours. This creates an incomparable taste and a beautiful color.
Alphütte’s “Swiss Forest Ham” is rightly named: You feel like you’re in the middle of nature when you enjoy this delicious piece of cured meat.
