Alphütte’s “Lonzino affumicato” (smoked loin) is made only with the very best piece of Taiwanese pork loin, according to a traditional Italian recipe.
Greatest care is taken in the selection of the meat, the preparation of the meat and the seasoning.
Since this is a piece of very lean meat, the times for salting and the mixture of spices and aromatic herbs must be measured very carefully and there is very little room for errors.
After a little over two months in average, the “Lonzino” is ready to be smoked several times and therefore will become the “Lonzino affumicato”.
After another few weeks of curing, it is ready to eat: tender, rosé and tasty.
The delicate taste of Alphütte’s “Lonzino affumicato” makes it a unique and excellent product that can be enjoyed as a starter with raw vegetables and cheese. “Lonzino affumicato” can also be found in pasta recipes. It can be used as a delicious topping for sandwiches or as a unique ingredient on cold plates.
Since “Lonzino affumicato” is very lean, it is also ideal for low-fat diets.
