Swiss Beer Sausage

Beer Sausage is a Swiss specialty, with a garlicky flavor and pinkish red color. It is seasoned with black pepper, paprika, and mustard seeds.
The meat is partially cured and then made into the sausage with the other ingredients, after which, the sausage is further cured and then blanched.
Contrary to the name, Beer is just the very minor portion of the ingredients. During the production process, all the alcohol will be evaporated and only the beer taste will remain in the finished product.
Beer Sausage belongs to the family of “cold cuts” and shall not be cooked but rather be used as sandwich, lunch or snack.
