“Capocollo” (also known as “Coppa”) is a very traditional Italian pork cold cut.
The production is very complex and time-consuming. Capocollo is first lightly seasoned with wine, garlic, and a variety of herbs and spices.
The meat is then salted and hung for several months to cure.
Capocollo is esteemed for its delicate flavor and tender, fatty texture. In many countries, it is often sold as a gourmet food item. It is usually sliced thin for use in appetizers or sandwiches, Italian panini, as well as some traditional Italian pizza.
